Can You Have Too Much Zucchini?
I believe it was Garrison Keiler who said, “July is the only time of year when country people lock our cars in the church parking lot, so people don’t put squash on the front seat. I used to think that was a joke.” Last year I had total zucchini failure, one zucchini out of 6 plants before the bugs took them out. This year I only planted 4 plants and covered them until the plants were so big they pushed the covering off. Let me just say it’s been a better year. I’ve never seen zucchini travel as much as these have. This photo was taken August 4th.
They have currently grown an additional 14 feet beyond the edge of the raised bed into the lawn. Sorry Honey. Oh sure, I’ve had a little zucchini hangover onto the lawn before but nothing like this! A thought just struck me. I wonder if you could make zucchini wine? A quick search reveals that indeed you can. Find a recipe here. Anyway, so far I’ve picked 133.5 pounds of zucchini from the 4 plants including this 8 pounder.
I have cooked fresh zucchini in vegetable stir fry and frozen and dehydrated zucchini. I’ve given away as much as my friends and family will take. One person toughtf I was giving him a watermelon. I’ve found it can be substituted for apples in an apple cake recipe. I’ve thought about making zucchini pickles but those recipes call for quite a bit of sugar and the point of growing zucchini is to eat something healthy out of the garden. If I’m going to eat sugary zucchini, I’d rather it be in the form of a baked good however I’ll have to limit those as well. I’ve made zucchini marmalade (recipe in the Ball Complete Book of Home Preserving but not on their website) Most of it will be Christmas gifts (hey family, pretend to be surprised when you get it).
It probably doesn’t surprise you to know that there are more unusual things you can make with zucchini, like “crab” cakes. Find that recipe and a few others here.
Did I mention I also planted a different variety of zucchini in another part of the garden as well? I’ll tell you more about that later. In the mean time, both types are still producing and I have more recipes to try. If you have a tried and true zucchini recipe that isn’t a sweet baked good, let me know.
